Brownie batter:
☾ 3 tbsp applesauce
☾ 1 cup all-purpose flour
☾ 1 tsp baking powder
☾ pinch of salt
☾ ½ cup cacao powder
☾ 1/2 cup melted vegan butter
☾ 1 cup lightbrown sugar
☾ 1/4 cup Hecate Wytchwood syrup
☾ 1 tsp ground cinnamon
☾ 1 tsp instant coffee
☾ 1 tsp vanilla extract
☾ 1/4 cup plant milk, like oat or coconut
☾ 1 cup vegan dark chocolate chips
Magical Method
Grease and line your baking tin with baking paper. Make sure both sides have some hanging baking paper so you can take out the brownie very easily when baked.
Preheat your oven to 350 degrees F (175 C)
Grab a large mixing bowl and start adding your dry ingredients first. Put them through a sieve so you do not have any big chunks of flour or cacao. Set aside.
Take a small saucepan and melt the vegan butter and let cool to a room temperature. Meanwhile when that cools mix the liquid ingredients together with a whisk and add the butter as well.
Add the wet to the dry ingredients, plus half the amount of chocolate chips and mix until combined, do not overmix the batter.
Pour the batter into your lined baking tin and smooth the top out with a spatula, scatter over the remaining chocolate chips and bake for 25 minutes. Let the brownie completely cool and enjoy the magic!
